Baby Bok Choy according to Brett

Soak Bunches of baby bok choy ~ 1½ pounds, in water for 30 minutes.
Rinse, trim ends. I like them whole but I prefer to break off leaves.
Keep the center piece, has a great texture when cooked.
In a large sauté pan with lid, add:
2 tbsp neutral cooking oil, I use canola
1 slice Bacon
Heat oil and bacon over low-medium heat to pre-cook bacon and release fat.
Don't over cook
Add 1 tsp minced garlic or 1/2 tsp garlic powder, ¼- ½ tsp Tabasco Pepper Sauce
Cook, stir constantly, about 1 minute.
Add bok choy and stir to cover with oil, cook for 2 minutes.
Add low-sodium soy sauce, sea salt
Add a pint chicken stock or a can if no fresh or use water, if neither
They are ready traditionally done after covering with lid until steam begins to escape from beneath the lid.
Turn off heat.
But I like mine cooked longer and with more juice,
So sometime I will add 1 quart of water and let it simmer a while.
